Spuds, those humble potatoes, are a staple food in countless countries. A member
of the Solanum family of plants, the potato originated in South America where
many hundreds of distinct varieties are now cultivated. Only a few varieties are
grown in other parts of the world, but baked, boiled, steamed, roasted, or as
chips or crisps, they are a food that is, in some form, a part of the diet of
literally billions of people.
